Nourishing Mushroom Risotto

Warm and good for the soul!

This mushroom risotto is filled with delicious nourishing chicken broth and nutritious mushrooms! If you want to add more iron this recipe also works well with chicken! Just add it in with the onion and make sure you cook it through. This meal is perfect to eat postpartum.

2 TBS Butter

1 Onion

2 cloves of garlic

1/2 cup of mushrooms

1 cup of arborio rice

2 cups of chicken broth

2ts Thyme

2ts rosemary

sea salt to taste

  1. Add butter, onion and garlic into the pan

  2. once onion is cooked, add in mushrooms and stir for 2 minutes

  3. add in rice and stir until coated in the butter (can add a little more if needed)

  4. add in 1.5 cups of broth

  5. Let simmer and add the rest of the broth as needed

  6. Add in the parmesan

  7. Add in the spices and stir

  8. You can add more parmesan to your individual serving if needed!

  9. Enjoy!!
